Cinnamon Apple Tea Cake

A great traybake with a light apple sponge and crunchy cinnmon topping

Sponge Base

  • 225 gms Plain Flour
  • 0.5 tspn Salt
  • 1.5 tspn Baking powder
  • 75 gms Butter or Baking Spread
  • 75 gms Caster Sugar
  • 1 Egg Free Range
  • 140 ml Milk
  • 1 Apple Chopped Approx 125gms

Cinnamon Crunchy Topping

  • 25 gms Plain Flour
  • 50 gms Granulated Sugar
  • 0.5 tspn Cinnamon
  • 35 gms Cold Butter or Baking Spread


  1. Preheat the oven to 190c, 170c fan, Gas Mark 5, 275f

  2. Grease and line an 8" Brownie tin

  3. In a large mixing bowl sift together the flour, salt and baking powder

  4. Cut the butter into small cubes and rub into the dry ingredients until it resembles breadcrumbs

  5. Mix through the sugar

  6. Beat the egg and the milk together and add to the other ingredients mixing until you have a soft batter

  7. Core the apple and chop into small pieces and stir through the mix. You can peel the apple if you want, but I didn't bother. 

  8. Pour the mix into the brownie tray and set yo one side whilst you make the Cinnamon Crunchy Topping

  9. In another mixing bowl put the flour, sugar and cinnamon and mix together

  10. Cut the butter into small cubes rub into the dry ingredients to make a crumb. 

  11. Sprinkle over the batter in the brownie tray and bake for 35 -40 minutes, or until a skewer placed in the centre comes out clean

  12. Remove from the oven and allow to cool before removing from the tin and slicing
