    Vegan Chocolate Cupcakes

Vegan Chocolate Cupcakes? Are you sure they are Vegan? Really? But they look so ‘normal’!  For various reason, we often get asked to make Eggless and/or Dairy Free cakes. This recipe is a fail safe, easy to make, yummy scummy Vegan Chocolate Cupcakes recipe, which means Dairy Free AND Eggless!  To be honest, if no-one told you these were Vegan, you’d never know it, or believe it, because these Vegan Chocolate Cupcakes are light, fluffy, moist, rich, chocolatey and easy to make – everything a Cupcake should be, with nothing missing in taste and texture.   They do use a spread to add the fat content. My choice of spread is…

    Its been a while……

Weeeeell, hello there stranger! How are you? I know, I know, it’s been a while, but you wouldn’t believe how busy I’ve been. Let me give you a quick run-down of what’s been happening since I spoke to you last. My dream of owning my own tea-room and cake shop was screaming louder and louder at me, so on December 4th I handed in my notice from a full-time career, to take a part-time job, which would allow me to spend more time making and selling cakes. I had a month before starting the new job, so as it was coming up to Christmas I thought I’d get some shopping…

    Waitrose Raspberry Cupcakes

Inspiration for baking comes in many forms. This week I got a text from my Mum. It read ‘Did you get the recipe from waitrose for cupcakes to enter their competition to win a cookery course. Thought you should enter that!! xxx’   Well no I didn’t, and yes I should. So in the age of technology, she photographed the recipe card she got through the post and texted it over to me……my Mum may be retired but she is a bit of a techie, and the main form of communication between us is either text or messaging on our iPads. So armed with my 2 text messages (one for…

    National Cupcake Week

Did you know this week is National Cupcake Week? Have you rolled up your sleeves and baked anything, or are you more a cupcake purchaser? Whatever your preference, this is the week to indulge in little sponge cake parcels. Cupcakes are great. They are your own personal cake that you don’t have to share, because there is only ever enough for one. They’re easy to make and great to make with your children. In fact they’re great to make with your Mum too, and I think the best times I have in the kitchen has been when me and Mum are baking together. The cupcakes on this post were made…

Diet Cola Cupcakes with Brown Sugar and Cola Frosting

How many times have you gone for a takeaway, ordered a mahoosive burger, a portion of chips and diet drink and then realised how ridiculous your meal looks – lashing of fat, but hold the sugar! But the diet drink makes the burger more angelic…..doesn’t it? That’s you having will power….right?   Well these cupcakes are just like that! And I mean they actually have a diet drink in them, which means you need less sugar (lets forget the butter content eh?) These cakes came at the end of the Diamond Jubilee weekend, where we had had a house full of guests, some with sore heads in the morning and…

    Titanic Apple Meringue Cupcakes

One hundred years ago, on this day, hundreds of people in the city of Southampton were waiting anxiously for news of their loved ones. My Great Nan was a child one hundred years ago today, so hopefully knew little of the distress her mother was going through, as she waited patiently for news of my Great Great Uncle, Mr Christopher Light, who had 3 days earlier checked in for work aboard Titanic. I am originally from the Southampton area, as are most of my ancestors. Coming from the area, it is little surprise that my family were touched by the disaster of Titanic, as nearly 600 people from the area…

    Creme Egg Cupcakes

OK, so Easter is over. You’ve got a tonne of chocolate eggs sitting around waiting to be eaten. What do you do with them? Eat them? Nah…..let’s not be boring about this……why not bake them in a cupcake? This is one of the easiest, but most impressive tricks to pull off. If you can bake a cupcake, and have a freezer then, seriously, you can do this!!!!!! Firstly, freeze your eggs……NO, NO……..don’t all run down to the local fertility clinic! I mean put your Creme Eggs, Caramel Eggs, or whatever delights you’ve been given this past easter in the freezer for a minimum of 3 hours. They have to be frozen…

Classic Combo No.2 – Carrot Cake with Cream Cheese Frosting, in cupcake form….

; Today I am continuing my Irregular Series of Classic Combinations. A few posts back, I posted my recipe for Cream Cheese Frosting after I had a eureka moment. From reading many blogs from around the world, it sometimes seems that Cream Cheese Frosting, is the frosting of choice in some parts of America and Canada. It would appear it goes with every type of cake or cupcakes baked. However, back here in blighty (England for my foreign readers), Cream Cheese Frosting is traditionally found on Carrot Cake. Its one of those Laurel and Hardy combinations – just perfect together!! The moistness of a good Carrot Cake, combined with the…

February 29th – Funfetti Cupcakes with Red Petticoats

Is it just me that’s thinks that today you can get up to all sorts of stuff, because it doesn’t really count? Today, February 29th isn’t a real day, is it? It’s an extra day! One that we don’t normally get! A day where your employer gets a whole day extra from you without paying overtime, but that you can cram with a whole days worth of extra stuff, just because it’s there…….am I sounding a bit odd? I’ve always thought that about February 29th. That spare day once every 4 years, where you can do a bit more, because you have the extra time you always crave. For some…

    Lemon Cupcakes

I love cupcakes!! They are my favourite type of cake to make. Everything about them makes me happy: choosing flavours, designing new recipes, choosing the cases, deciding on the frosting, decorating them, and above all eating them. Cupcakes allow you to have your own little cake, that you don’t have to share, and that’s been baked and decorated just for you!! This week I had an order of Baby Shower Cupcakes to make. Vanilla sponge with yellow and white frosting, sprinkled with edible glitter and topped with handmade babies dummy. As the theme was yellow and white, and I knew I would have some spare frosting (well you just know…

    Naturally Pink Cupcakes

Valentines is on its way….the more sceptical amongst you may think its just another way the card and gift manufacturers get you to part with your hard earned cash, and in many ways I agree. However, I also feel that its a way of making you stop and truly appreciate the loved ones in your lives, and I don’t just mean your significant others. For many many years, before he was sadly taken from us, I would send my Great Uncle, or as we all knew him, Unc, a Valentines card. And I would always get one back. My Unc was better than any grandfather. He was a personality…
