    Why Cover Your Cake Board

Do you cover your Cake Board? When you look at someone else’s cake and marvel at how professional and perfect it looks, how many times do you see it sat on a silver, uncovered board? Not often, I bet! Covering a cake board is quick, easy and an essential finishing touch to make your cake look professional. No matter whether your cake will be naked, buttercream, ganache or fondant finished, a covered cake board will not only give your cake that finishing flourish, but it can also add to the design and overall look of your creation. But, WHY?   Basically it’s all about completing your design. A good design…

Just before Christmas I tried my hand at some video blog posts, with Brownie Christmas Trees and a Festive Yule Log. They still need a bit of refining, but I loved the idea of being able to talk you through some of my best recipes. I…

Well seriously this is the bake to go to. Full of chocolatey goodness, and sweet with lightly whipped buttercream, this is a great festive treat.  Follow the video and learn to bake it like a pro. Little Apple Cakes

Autumn is on its way which in our house means having masses of apples, so with that in mind I have set about hunting out some great apple recipes – first up are Little Apple Cakes. When I say we have masses of apples, I mean it. We have 2 apple trees, which could be very very old – our cottage is over 500 years old, and although the trees aren’t the same age as the cottage, we’re fairly certain they are older than me – so that’s pretty old! Every year our trees are full. This year has been very dry and hot, so the apples are small, some…

    Scrummy Rocky Road

Rocky Road…..Chocolate, Biscuits, Marshmallows, and ANY other sweets and candies that YOU want to add. There are no hard and fast rules about Rocky Road, as long as it has the basic chocolatey base, you really can throw any sweet treat you like at it and it won’t ruin it. I often make Rocky Road for Fairs and Markets, and they are always, without doubt, THE most popular thing on the table. I always make twice as much as anything else, I make them with both Dark and White chocolate, and they always, always sell. The question I get asked a lot is “what’s in them?”, and my standard answer…

    Tottenham Cake….

….just like Percy Ingles makes. To many people, well actually most people, Tottenham Cake and Percy Ingles means nothing, but work or live in the Eastend of London and you’ll know exactly what I’m talking about. I worked in Hackney, in London’s East end for over 10 years, and was lucky to regularly enjoy delights from Percy Ingles Bakery, from ‘down the Roman Road’….and wow did they have some yummy delights. Percy Ingles is a household name in Hackney, but step away from the Capital and few people will know what you’re talking about. It is a family bakery with over 50 shops in London and makes a great classic…

    Chocolate Lovers Fudge Topped Brownie

It’s getting cold! Summer is very much over, but that’s no reason to be down, oh no……I have something easy and yummy to make you forget about the cold weather and shorter days. Both can be made separately, but hey? Why do that when you can just put both together?  This bake does need a little time to set, so be prepared to wait before you can enjoy the full magic.   Fudge Topped Brownie…
